Ingredients
- 1/2 lb (225 grams) pasta (spaghetti, penne, fusilli)
- 3/4 cup (160 grams) cream cheese
- 1/4 cup (30 grams) grated parmesan cheese
- 1 tablespoon olive oil
- 1–2 garlic cloves, minced
- 1/2 cup (120 ml) pasta cooking water
- Salt and pepper, to taste
- Optional: chili flakes
Instructions
- Boil the pasta in salted water according to package instructions until al dente. Reserve 1 cup of cooking water before draining.
- In a skillet over low heat, warm olive oil and sauté minced garlic for 2–3 minutes without burning.
- Stir in cream cheese and 1/2 cup reserved pasta water until smooth; add grated parmesan until melted.
- Toss drained pasta into the skillet, mixing until evenly coated. Adjust consistency with more reserved pasta water if needed.
- Serve immediately with olive oil drizzle and additional parmesan.
