- 1 pound boneless, skinless chicken thighs
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ground white pepper
- 4 cups chicken broth
- 2 cloves garlic, minced
- 1 teaspoon ginger, finely grated
- 4 ounces egg noodles
- 1 cup bok choy, chopped
- 1 cup mushrooms, sliced
- 2 green onions, chopped
- 2 tablespoons sesame seeds, toasted
- Salt and pepper to taste
Instructions
- Marinate sliced chicken with soy sauce, sesame oil, and white pepper for 5 minutes.
- Cook egg noodles according to package instructions; drain and set aside.
- In a large pot over medium heat, sauté garlic and ginger in sesame oil until fragrant.
- Add mushrooms and cook until softened; then add marinated chicken and brown for about 5-7 minutes.
- Pour in chicken broth; bring to simmer and add bok choy for an additional 2-3 minutes.
- Stir in cooked noodles and green onions; season with salt and pepper to taste.
- Serve garnished with toasted sesame seeds.
