  • 1 ounce package red gelatin (e.g., JELL-O Strawberry)
  • 1 ounce package blue gelatin (e.g., JELL-O Berry Blue)
  • 3 cups miniature marshmallows (divided)
  • Warm water
  • Lollipop sticks

Instructions

  1. Spray an 8.5 x 11" baking dish with cooking spray.
  2. In a microwave-safe bowl, dissolve red gelatin in 1/2 cup warm water. Microwave for 1.5 minutes and stir until completely dissolved.
  3. Stir in 1.5 cups of marshmallows, microwave for another minute, whisk until smooth, then pour into the baking dish and chill until set.
  4. Repeat the process for the blue layer using the remaining gelatin, pour on top of the red layer once set.
  5. Chill both layers until firm, then cut into strips and roll into pinwheels, inserting lollipop sticks into one end.
