  • 2 carrots, diced
  • 2 celery stalks, diced

  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup alphabet pasta
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Season chicken with salt and pepper and cook for 5-7 minutes per side until browned. Remove chicken and let cool.
  2. In the same pot, sauté onion, carrots, and celery for about 5 minutes until tender. Stir in thyme, basil, and garlic powder.
  3. Pour in chicken broth and water; bring to a boil then reduce to simmer.
  4. Shred the cooled chicken and add it along with the alphabet pasta to the pot. Simmer for an additional 10 minutes.
  5. Stir in frozen peas; cook for another 2-3 minutes. Adjust seasoning with salt and pepper.
  6. Serve hot, garnished with fresh parsley.
