- ¼ cup unsalted butter
- ¼ cup granulated sugar
- 1 large egg
- ½ tsp vanilla extract
- ½ cup no-sugar added applesauce
- 1 ½ cups diced Honeycrisp apples
- 2 cups powdered sugar
- ⅓ cup + 2 tbsp apple cider
Instructions
- Preheat oven to 350°F (175°C) and prepare a mini muffin tin.
- In a bowl, whisk together flour, baking powder, salt, and cinnamon.
- Cream butter and sugar until fluffy; add egg, vanilla, and applesauce.
- Gradually combine wet and dry ingredients; fold in diced apples.
- Fill muffin tins about ¾ full and bake for 15-18 minutes until golden.
- For the glaze, whisk powdered sugar with apple cider until smooth.
- Dip warm fritter bites in glaze and let cool on a wire rack.
