  • 1 large egg
  • ¼ cup (57 g) unsalted butter, softened
  • 6 oz (170 g) cream cheese, softened
  • ¼ cup (30 g) powdered sugar
  • 1 egg yolk
  • ½ teaspoon vanilla extract
  • 2 medium apples, peeled and diced
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • Pinch of nutmeg
  • 1 teaspoon cornstarch
  • 1 tablespoon unsalted butter
  • ¼ cup (30 g) all-purpose flour
  • 2 tablespoons brown sugar
  • 2 tablespoons cold butter, diced
  • ½ cup (60 g) powdered sugar
  • 12 tablespoons milk
  • ¼ teaspoon vanilla extract

Instructions

  1. Warm the milk slightly. Stir in the yeast and granulated sugar; let it sit until foamy (5–10 minutes).
  2. In another bowl, combine the flour and salt. Add the yeast mixture, egg, and softened butter. Knead until smooth (8–10 minutes by hand or 5 minutes using a mixer). Cover the dough and let it rise in a warm place until it doubles in size (1 to 1½ hours).
  3. Melt butter in a saucepan over medium heat. Add diced apples, brown sugar, cinnamon, and nutmeg; stir to coat. Sprinkle in cornstarch and cook until apples soften and mixture thickens (5–7 minutes). Set aside to cool.
  4. Beat together cream cheese, powdered sugar, egg yolk, and vanilla extract until smooth. Chill until ready to use.
  5. In a bowl, mix flour and brown sugar. Cut in cold butter until mixture resembles coarse crumbs. Chill until ready.
  6. Punch down risen dough. Divide into 10–12 equal portions; roll into balls and place on a parchment-lined baking sheet. Flatten slightly then press a well into each bun's center. Fill each well with cheesecake mixture followed by apple topping. Sprinkle crumble on top.
  7. Let buns rise for another 20–30 minutes while preheating oven to 350 °F (175 °C). Bake for 20–25 minutes until golden brown. Cool on the pan for about 10 minutes.
  8. Whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over warm or cooled buns before serving.
