- 1 ¼ cups apple cider
- 1 ½ cups flour
- 6 tablespoons unsalted butter
- ¾ cup brown sugar (divided)
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup chopped Granny Smith apples
- Spices: cinnamon, nutmeg, ginger
- 3 ½ tablespoons unsalted butter (melted)
- ½ cup flour for streusel
- ¼ cup brown sugar for streusel
- 1 tablespoon granulated sugar for streusel
- ½ teaspoon cinnamon for streusel
- ½ teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon ginger (pumpkin pie spice or allspice)
- ¼ cup Greek yogurt or sour cream
- 1 tablespoon plus 1/2 teaspoon apple cider for glaze
- ¼ teaspoon vanilla for glaze
- ¾ cup powdered sugar for glaze
- 1 pinch of salt for glaze
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a saucepan, simmer apple cider until reduced to about ½ cup; set aside to cool.
- Mix together melted butter, flour, brown sugar, granulated sugar, and cinnamon for the streusel; set aside.
- In a bowl, whisk flour, salt, baking powder, baking soda, and spices.
- In another bowl, cream butter with sugars until fluffy; add egg and vanilla.
- Stir in yogurt and cooled cider mixture.
- Gradually mix dry ingredients into wet ingredients; fold in apples.
- Pour batter into prepared pan; top with streusel.
- Bake for 35-40 minutes until golden and a toothpick comes out clean.
- Cool before glazing with a mixture of powdered sugar, cider, vanilla, and salt.
