  • ½ cup flour for streusel
  • ¼ cup brown sugar for streusel
  • 1 tablespoon granulated sugar for streusel
  • ½ teaspoon cinnamon for streusel
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon ginger (pumpkin pie spice or allspice)
  • ¼ cup Greek yogurt or sour cream
  • 1 tablespoon plus 1/2 teaspoon apple cider for glaze
  • ¼ teaspoon vanilla for glaze
  • ¾ cup powdered sugar for glaze
  • 1 pinch of salt for glaze

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a saucepan, simmer apple cider until reduced to about ½ cup; set aside to cool.
  3. Mix together melted butter, flour, brown sugar, granulated sugar, and cinnamon for the streusel; set aside.
  4. In a bowl, whisk flour, salt, baking powder, baking soda, and spices.
  5. In another bowl, cream butter with sugars until fluffy; add egg and vanilla.
  6. Stir in yogurt and cooled cider mixture.
  7. Gradually mix dry ingredients into wet ingredients; fold in apples.
  8. Pour batter into prepared pan; top with streusel.
  9. Bake for 35-40 minutes until golden and a toothpick comes out clean.
