  • ½ cup unsalted butter, melted
  • ½ tsp vanilla extract
  • 2 large Granny Smith apples, peeled and diced
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup full-fat sour cream
  • 2 cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp kosher salt
  • 1 tsp baking powder
  • ½ cup powdered sugar (for glaze)
  • 2 tbsp apple cider
  • 1 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9-inch springform pan with parchment paper.
  2. In a bowl, mix flour, brown sugar, cinnamon, and nutmeg. Stir in melted butter and vanilla until crumbly; set aside.
  3. In another bowl, cream softened butter and granulated sugar until fluffy. Add eggs one at a time, then mix in vanilla and sour cream.
  4. Combine flour, baking soda, salt, and baking powder in a separate bowl. Gradually add to the wet mixture until just combined.
  5. Layer half the batter in the prepared pan, followed by diced apples and half of the streusel. Top with remaining batter and streusel.
  6. Bake for 40–55 minutes or until a toothpick comes out clean. Cool before drizzling with glaze made from whisking powdered sugar, apple cider, and cinnamon.
