Ingredients
- 1½ cups all-purpose flour (for streusel)
- ½ cup light brown sugar
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ½ cup unsalted butter, melted
- ½ tsp vanilla extract
- 2 large Granny Smith apples, peeled and diced
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup full-fat sour cream
- 2 cups all-purpose flour
- ½ tsp baking soda
- ½ tsp kosher salt
- 1 tsp baking powder
- ½ cup powdered sugar (for glaze)
- 2 tbsp apple cider
- 1 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9-inch springform pan with parchment paper.
- In a bowl, mix flour, brown sugar, cinnamon, and nutmeg. Stir in melted butter and vanilla until crumbly; set aside.
- In another bowl, cream softened butter and granulated sugar until fluffy. Add eggs one at a time, then mix in vanilla and sour cream.
- Combine flour, baking soda, salt, and baking powder in a separate bowl. Gradually add to the wet mixture until just combined.
- Layer half the batter in the prepared pan, followed by diced apples and half of the streusel. Top with remaining batter and streusel.
- Bake for 40–55 minutes or until a toothpick comes out clean. Cool before drizzling with glaze made from whisking powdered sugar, apple cider, and cinnamon.
