- Mini taco shells
- Apples (peeled, cored, and diced)

Instructions
- Prepare the apple filling by cooking diced apples with brown sugar, lemon juice, cinnamon, and flour over medium heat until tender (5-7 minutes). Let it cool.
- For the cheesecake filling, beat softened cream cheese with granulated sugar and vanilla until smooth. In another bowl, whip heavy cream to stiff peaks and gently fold into the cream cheese mixture.
- Assemble tacos by spooning cheesecake filling into each taco shell followed by the apple mixture.
- Drizzle with caramel sauce and top with whipped cream if desired. Serve immediately or refrigerate for up to 2 hours.
