- 1 teaspoon vanilla extract
- 3 medium apples, peeled and diced
- ½ cup brown sugar
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 tablespoon milk (for glaze)
- ½ cup powdered sugar (for glaze)
Instructions
- To make the dough, whisk together flour, baking powder, and salt. Cream softened butter with sugar until fluffy. Beat in egg and vanilla, then gradually add the flour mixture. Chill the dough for 30 minutes.
- For the apple filling, cook diced apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until tender. Let cool.
- Preheat the oven to 350°F (175°C). Roll out dough and cut into circles. Place half on a lined baking sheet, add apple filling to each circle's center, top with another dough circle, and press edges to seal.
- Bake for 15-18 minutes until golden. Cool on wire rack before glazing with a mixture of powdered sugar and milk.
