  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • ½ teaspoon ground cinnamon (for frosting)
  • 23 tablespoons heavy cream (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a small bowl, combine diced apples with lemon juice and sugar; set aside.
  3. Whisk together flour, baking powder, baking soda, salt, and cinnamon in a medium bowl.
  4. In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition; stir in vanilla.
  5. Gradually add dry ingredients alternating with buttermilk until just combined. Fold in prepared apples.
