- 1 cup plain yogurt
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons sugar
- 1 tablespoon melted butter
- 1/4 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1 cup flour (spooned and leveled)
- 4 small soft apples (such as Gala)
Instructions
- In a large bowl, whisk together yogurt, eggs, vanilla extract, sugar, melted butter, salt, and baking powder until combined.
- Gradually add flour, mixing until just combined to keep the batter light.
- Peel and core apples, then slice into rings about 1/3 inch thick.
- Heat clarified butter or vegetable oil in a non-stick frying pan over medium heat.
- Dip each apple ring into the batter until coated and place in the pan.
- Cook until golden brown on both sides and firm to the touch.
- Transfer to a plate and sprinkle with powdered sugar or cinnamon sugar before serving.
