Instructions
- Preheat your oven to 325°F (163°C) and grease two 8 x 4-inch loaf pans.
- Grate the zucchini and dice the apple; set aside.
- In a large bowl, mix flour, cinnamon, salt, baking powder, and baking soda.
- In another bowl, beat eggs, oil (or applesauce), vanilla extract, and sugars until blended.
- Combine wet and dry ingredients without overmixing.
- Gently fold in zucchini, apple, and walnuts; let batter rest for about 5 minutes.
- Divide batter between prepared pans and bake: mini loaves for 35-40 minutes or full-sized for about 55 minutes.
- Cool in pans for about 20 minutes before transferring to wire racks to cool completely.
