- ¼ cup lime juice
- 2 tablespoons honey
- 1 tablespoon olive oil
- 4 boneless skinless chicken breasts
- ½ cup ranch dressing
- 1 tablespoon taco seasoning mix
- 1 cup shredded cheddar cheese
Instructions
- In a bowl or ziptop bag, combine lime juice, honey, minced garlic, cumin, salt, pepper, and smoked paprika. Mix well.
- Add chicken breasts to the marinade and coat thoroughly. Refrigerate for at least 30 minutes.
- Combine ranch dressing, taco seasoning, and lime juice in a separate bowl to make the Mexi-ranch dressing.
- Preheat grill to medium-high heat. Grill chicken for 6-8 minutes on each side until cooked through (165°F).
- Transfer chicken to a baking sheet, top with Mexi-ranch dressing and shredded cheddar cheese.
- Broil for 1-2 minutes until cheese is bubbly and melted.
- Serve on tortilla strips with optional garnishes.
