- 1/2 cup pecans
- 1 cup balsamic vinegar
- 1/4 cup honey (or brown sugar)
Instructions
- Prepare the dressing by whisking together balsamic vinegar and honey in a mixing bowl. Set aside.
- In a large mixing bowl, combine baby spinach, sliced apricots, and cherries. Gently fold in crumbled feta cheese and pecans.
- Drizzle the prepared dressing over the salad mixture and toss gently to coat without bruising the spinach.
- Serve immediately or chill for about 10 minutes to enhance flavors.
