Ingredients
- 1 tablespoon avocado oil
- 1 pound ground chicken
- 1/2 cup white onion, finely chopped
- 1 cup red bell pepper, chopped
- 1/2 cup shredded carrots
- 3 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon toasted sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon liquid sweetener, such as honey or sugar-free maple syrup if keto
- 1 tablespoon minced garlic
- 2 teaspoons sweet chili sauce
- 2 teaspoons fresh ginger, minced
- 1 head butter lettuce
- Green onions
- Crushed peanuts
- Red pepper flakes
Instructions
- In a jar, combine all sauce ingredients and shake until smooth.
- Heat a non-stick skillet over medium heat; add avocado oil and ground chicken. Cook until browned.
- Add onion, bell pepper, and carrots to the skillet; sauté for 3-4 minutes until softened.
- Drain excess grease from the skillet and pour in the prepared sauce; toss to coat.
- Simmer on medium-low heat until the mixture thickens slightly.
- Spoon filling into lettuce leaves and top with green onions and crushed peanuts as desired.
