  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon liquid sweetener, such as honey or sugar-free maple syrup if keto
  • 1 tablespoon minced garlic
  • 2 teaspoons sweet chili sauce
  • 2 teaspoons fresh ginger, minced
  • 1 head butter lettuce
  • Green onions
  • Crushed peanuts
  • Red pepper flakes

Instructions

  1. In a jar, combine all sauce ingredients and shake until smooth.
  2. Heat a non-stick skillet over medium heat; add avocado oil and ground chicken. Cook until browned.
  3. Add onion, bell pepper, and carrots to the skillet; sauté for 3-4 minutes until softened.
  4. Drain excess grease from the skillet and pour in the prepared sauce; toss to coat.
  5. Simmer on medium-low heat until the mixture thickens slightly.
  6. Spoon filling into lettuce leaves and top with green onions and crushed peanuts as desired.
