Instructions
- In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
- Add chicken chunks to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour or overnight.
- Preheat the grill to medium-high heat.
- Thread marinated chicken onto soaked wooden skewers, alternating with red onion and bell pepper pieces.
- Grill skewers for 8–10 minutes, turning occasionally until the chicken is fully cooked.
- Serve immediately with warm pita bread and tzatziki sauce.
