- 8–10 slices bacon
- 1 tablespoon butter or olive oil
- 1 large onion (diced)
- 2 large carrots (peeled and sliced)
- 4 cups chicken broth
- 16 ounces gnocchi
- 2 cups heavy cream or half-n-half
- 2 cups cheddar cheese

Instructions
- Cook bacon until crispy; let drain on paper towels and cut into pieces.
- In a large pot, heat butter/olive oil over medium heat. Sauté onions and carrots until tender (10-15 minutes).
- Add chicken broth and bring to a simmer.
- Stir in cream and seasonings; reduce heat to medium-low and simmer gently.
- Gradually add grated cheddar cheese until melted smoothly.
- Stir in gnocchi; cook for an additional 2 minutes.
- Finish with crispy bacon bits before serving.
