Ingredients
- 2 pounds bone-in, skin-on chicken thighs
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- ½ cup honey
- 2 tablespoons hot honey or chili-infused honey
- Spices: salt, pepper, garlic powder, paprika, cayenne pepper
Instructions
- Marinate chicken in buttermilk (and optional hot sauce) for at least 1 hour or overnight.
- Preheat oven to 425°F (220°C). Prepare breading by mixing flour with spices in one shallow dish and placing panko breadcrumbs in another.
- Dredge marinated chicken in the flour mixture, dip back into buttermilk, then coat with panko.
- Place on a parchment-lined baking sheet with an oven-safe rack and drizzle with melted butter.
- Bake for 30-35 minutes until golden brown and internal temperature reaches 165°F (74°C).
- For the hot honey sauce, warm honey and hot honey in a saucepan until well combined.
- Drizzle sauce over baked chicken before serving.
