Instructions
- Prepare the brisket by seasoning with mustard and your favorite rub; refrigerate for 1-2 hours.
- Smoke the brisket at 210°F using hickory pellets for 9-10 hours, then wrap in butcher’s paper and smoke again until tender.
- Caramelize diced onions in a pan until golden brown.
- Assemble the sandwiches with brisket, cheeses, fried onions, caramelized onions, and BBQ sauce between slices of sourdough bread.
- Toast the assembled sandwiches in a cast iron skillet until golden brown and the cheese has melted.
