- 2 large flatbreads
- 1 pound cooked chicken breast, shredded
- 1 cup barbecue sauce
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- ½ red onion, thinly sliced
- ½ cup fresh cilantro, chopped
- 1 tablespoon olive oil
- Salt and pepper
Instructions
- In a mixing bowl, combine the shredded chicken and barbecue sauce. Toss until well-coated and season with salt and pepper.
- Preheat your oven to 400°F (200°C) and arrange the flatbreads on a baking sheet. Drizzle olive oil over each.
- Spread the BBQ chicken mixture evenly over the flatbreads. Top with mozzarella, cheddar, and sliced red onion.
- Bake for 10-12 minutes until cheese is melted and bubbly, and edges are golden.
- Remove from oven, sprinkle with cilantro, slice into pieces, and serve immediately.
