Ingredients
- 8 ounces Biscoff cookies
- 1 cup brewed coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 8 ounces mascarpone cheese
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- Unsweetened cocoa powder (for garnish)
- 2–3 crushed Biscoff cookies (for garnish)
Instructions
- Brew coffee and let cool; add coffee liqueur if desired.
- In a mixing bowl, beat heavy whipping cream until soft peaks form. Gradually add powdered sugar until stiff peaks form.
- In another bowl, mix mascarpone cheese with vanilla extract and fold in whipped cream until smooth.
- Dip Biscoff cookies into cooled coffee briefly and layer half at the bottom of a serving dish. Spread half of the mascarpone mixture over the cookies.
- Repeat with another layer of soaked cookies followed by the remaining mascarpone mixture.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Before serving, dust cocoa powder and sprinkle crushed Biscoff cookies on top.
