  • 8 ounces Biscoff cookies
  • 1 cup brewed coffee, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 8 ounces mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Unsweetened cocoa powder (for garnish)
  • 23 crushed Biscoff cookies (for garnish)

Instructions

  1. Brew coffee and let cool; add coffee liqueur if desired.
  2. In a mixing bowl, beat heavy whipping cream until soft peaks form. Gradually add powdered sugar until stiff peaks form.
  3. In another bowl, mix mascarpone cheese with vanilla extract and fold in whipped cream until smooth.
  4. Dip Biscoff cookies into cooled coffee briefly and layer half at the bottom of a serving dish. Spread half of the mascarpone mixture over the cookies.
  5. Repeat with another layer of soaked cookies followed by the remaining mascarpone mixture.
  6. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  7. Before serving, dust cocoa powder and sprinkle crushed Biscoff cookies on top.
