Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1½ teaspoons baking powder
- 1½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 jar (24 ounces) Morello cherries, drained with juice reserved
- 3 cups heavy whipping cream
- ½ cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla. Beat on medium speed for about 2 minutes. Gradually stir in boiling water until combined.
- Divide batter between pans and bake for 30–35 minutes or until a toothpick comes out clean. Cool for 10 minutes before transferring to wire racks.
- Slice each cake in half horizontally once cooled. Prepare cherries by draining them but reserving the juice.
- In another bowl, whip cream with powdered sugar and vanilla until stiff peaks form.
- Assemble by layering cake with cherry juice, whipped cream, and cherries. Repeat layers and finish with whipped cream on top.
- Garnish with chocolate shavings and chill for at least 30 minutes before serving.
