  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 jar (24 ounces) Morello cherries, drained with juice reserved
  • 3 cups heavy whipping cream
  • ½ cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla. Beat on medium speed for about 2 minutes. Gradually stir in boiling water until combined.
  4. Divide batter between pans and bake for 30–35 minutes or until a toothpick comes out clean. Cool for 10 minutes before transferring to wire racks.
  5. Slice each cake in half horizontally once cooled. Prepare cherries by draining them but reserving the juice.
  6. In another bowl, whip cream with powdered sugar and vanilla until stiff peaks form.
  7. Assemble by layering cake with cherry juice, whipped cream, and cherries. Repeat layers and finish with whipped cream on top.
