- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- ½ cup semi-sweet chocolate chips, melted
- 1 cup cherry pie filling
Instructions
- Preheat the oven to 325°F (160°C). In a bowl, mix chocolate cookie crumbs with melted butter and press into the bottom of a springform pan.
- Bake the crust for 10 minutes and let it cool.
- Beat softened cream cheese until smooth; gradually add sugar and vanilla.
- Mix in eggs one at a time, followed by sour cream until combined.
- Stir in melted chocolate until fully integrated.
- Pour the filling over the cooled crust and bake for 50-60 minutes or until slightly jiggly in the center.
- Let cool in the oven with the door cracked for an hour, then refrigerate for at least four hours.
- Top with cherry pie filling before serving.
