- 1 cup unsalted butter
- 1 ½ cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup cherry preserves
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- ½ cup dark chocolate shavings
Instructions
- Cream softened butter and sugar until light and fluffy in a large bowl. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In another bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Gradually add to wet ingredients to form a soft dough.
- Cover the dough with plastic wrap and refrigerate for at least one hour.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Shape chilled dough into tablespoon-sized balls and place on the baking sheet, spaced apart.
- Bake for 10-12 minutes until set around the edges. Cool on a wire rack.
- Whip heavy cream with powdered sugar until stiff peaks form.
- Once cooled, top each cookie with cherry preserves, whipped cream, and sprinkle with dark chocolate shavings.
