Instructions
- Crush the lavender buds lightly using a mortar and pestle to release their aroma.
- In a wide saucepan, combine blueberries, honey, lemon zest, and lemon juice. Cook over medium heat until the berries soften, mashing to your desired consistency.
- Let the mixture simmer gently while skimming off any foam that rises.
- Check for set point at about 220°F (105°C) using a thermometer; it should wrinkle slightly when dropped onto a chilled plate.
- Stir in the crushed lavender buds once the jam has thickened.
- Ladle into sterilized jars and seal. Process in boiling water for 10 minutes for long-term storage.
