  • 1 recipe blueberry pie filling (about 3 cups homemade)
  • 1½ cups fresh blueberries
  • ½ cup powdered sugar
  • 1 Tablespoon cornstarch
  • 1 teaspoon vanilla paste
  • Zest and juice of 1 lemon
  • 1 teaspoon ground cinnamon
  • 3 uncooked 9" pie crusts
  • 1 egg (for egg wash)
  • Coarse sugar (for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine blueberries, powdered sugar, cornstarch, vanilla paste, lemon juice and zest, and cinnamon. Mix gently.
  3. Roll out two pie crusts into large rectangles and place one on the baking sheet as the base.
  4. Pour the filling onto the base crust evenly.
  5. Roll out the third crust, cut into strips, and weave over the filling to create a lattice top.
  6. Beat the egg with water and brush over the lattice; sprinkle coarse sugar on top.
  7. Bake for about 30 minutes until golden brown and bubbly.
  8. Allow to cool before slicing.
