Ingredients
- 1 recipe blueberry pie filling (about 3 cups homemade)
- 1½ cups fresh blueberries
- ½ cup powdered sugar
- 1 Tablespoon cornstarch
- 1 teaspoon vanilla paste
- Zest and juice of 1 lemon
- 1 teaspoon ground cinnamon
- 3 uncooked 9" pie crusts
- 1 egg (for egg wash)
- Coarse sugar (for topping)
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine blueberries, powdered sugar, cornstarch, vanilla paste, lemon juice and zest, and cinnamon. Mix gently.
- Roll out two pie crusts into large rectangles and place one on the baking sheet as the base.
- Pour the filling onto the base crust evenly.
- Roll out the third crust, cut into strips, and weave over the filling to create a lattice top.
- Beat the egg with water and brush over the lattice; sprinkle coarse sugar on top.
- Bake for about 30 minutes until golden brown and bubbly.
- Allow to cool before slicing.
