Ingredients

  • 1 lb dried navy beans
  • 1/2 lb salt pork (or diced bacon)
  • 2/3 cup molasses
  • 1/4 cup brown sugar
  • 1 large yellow onion, diced

Instructions

  1. Soak the beans overnight in cold water with 1 tablespoon of kosher salt.
  2. The next day, drain and simmer the beans in their soaking water for 30-45 minutes until tender. Drain again, reserving the liquid.
  3. Preheat your oven to 250°F (120°C).
  4. Score the salt pork and sear it in a Dutch oven until golden brown.
  5. Layer the seared salt pork at the bottom of the pot, followed by the drained beans and diced onion.
  6. In a bowl, mix molasses, brown sugar, mustard, salt, and pepper; pour over the bean mixture along with reserved liquid.
  7. Cover and bake for 6-8 hours, stirring occasionally and adding hot water as needed.
