Ingredients
- 15 oz yellow cake mix
- 3 large eggs
- 1/3 cup vegetable oil
- 1/2 cup peach nectar or juice
- 1 lb fresh peaches, peeled and chopped
- 1/2 cup unsalted butter (for frosting)
- 1 cup packed brown sugar (for frosting)
- 1 tsp vanilla extract (for frosting)
- 2 ½ cups confectioner’s sugar (for frosting)
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine yellow cake mix, eggs, vegetable oil, and peach nectar; mix well. Gently fold in chopped peaches.
- Pour batter into a greased 9×12 inch baking pan.
- Bake for approximately 28 minutes, checking for doneness with a toothpick.
- For the frosting, melt butter in a saucepan over medium heat; add heavy cream and brown sugar. Boil gently while stirring, then remove from heat and stir in vanilla and sifted confectioner’s sugar until smooth.
- Frost the warm cake immediately after baking; let cool before serving.
