Ingredients
- 1 pound sirloin steak, cut into bite-sized pieces
- 2 pounds Yukon gold potatoes, peeled and chopped
- 4 tablespoons unsalted butter (plus more for mashed potatoes)
- 4 cloves garlic, minced
- ½ cup whole milk
- ¼ cup sour cream
- Fresh parsley for garnish
Instructions
- Boil salted water in a large pot; add Yukon gold potatoes and cook until fork-tender (15-20 minutes). Drain and return to pot.
- Add 3 tablespoons butter, milk, and sour cream to drained potatoes; mash until creamy. Season with salt and pepper.
- While potatoes cook, heat a skillet over medium-high heat. Season steak bites with salt and pepper; melt 2 tablespoons butter in the skillet.
- Sear steak bites in one layer for about 2-3 minutes per side until browned. Add minced garlic; cook for another minute before stirring in the last tablespoon of butter.
- Serve by plating mashed potatoes topped with steak bites and garnished with parsley.
