Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup whole milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup unsalted butter, melted
- 1 cup heavy cream
- 2 large egg yolks
- 1/4 cup brown sugar
- 1/4 cup granulated sugar (for caramelizing)
Instructions
- In a bowl, mix flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, combine milk, eggs, vanilla extract, and melted butter; then blend into dry ingredients.
- Heat oil in a deep fryer to 350°F (175°C). Drop batter by spoonfuls into hot oil and fry until golden brown (about 2-3 minutes per side).
- For the custard, heat heavy cream with vanilla; whisk egg yolks and brown sugar separately. Combine and cook until thickened.
- Fill cooled donuts with custard using a piping bag and caramelize sugar on top using a kitchen torch or broiler.
- Serve warm or at room temperature.
