  • 1 cup heavy cream
  • 2 large egg yolks
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar (for caramelizing)

Instructions

  1. In a bowl, mix flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
  2. In another bowl, combine milk, eggs, vanilla extract, and melted butter; then blend into dry ingredients.
  3. Heat oil in a deep fryer to 350°F (175°C). Drop batter by spoonfuls into hot oil and fry until golden brown (about 2-3 minutes per side).
  4. For the custard, heat heavy cream with vanilla; whisk egg yolks and brown sugar separately. Combine and cook until thickened.
  5. Fill cooled donuts with custard using a piping bag and caramelize sugar on top using a kitchen torch or broiler.
  6. Serve warm or at room temperature.
