- 1 pound ground beef
- 1 pound ground pork
- 1 large egg
- 1 cup ricotta cheese
- 1/3 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1 cup pork rind crumbs for coating
- 1 cup heavy cream
- 2 tablespoons unsalted butter
- 1 1/2 teaspoons minced garlic
- Optional: 1/4 teaspoon paprika
- Optional: Fresh basil, for garnish
Instructions
- Preheat your oven to 400°F (200°C) and grease a baking dish.
- In a large bowl, mix ground beef, ground pork, egg, ricotta cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper until well combined. Shape into meatballs.
- Roll each meatball in pork rind crumbs and place them in the greased baking dish.
- Bake for 20 minutes until browned.
- In a skillet over medium heat, melt butter and sauté minced garlic until fragrant.
- Pour in heavy cream, season with salt and pepper, then simmer until thickened; stir in grated Parmesan cheese.
- Toss baked meatballs in the creamy sauce before serving.
