- 2 pounds ground turkey
- 1 cup pork rind crumbs
- 1 large egg
- 1 cup ricotta cheese
- 1/3 cup grated Parmesan cheese
- 1 teaspoon garlic powder (optional)
- 1 teaspoon Italian seasoning (optional)
- Salt, to taste
- Pepper, to taste
- 1 cup heavy whipping cream
- 1/4 cup grated Parmesan cheese (for sauce)
- 2 tablespoons unsalted butter
- 1 1/2 teaspoons minced garlic
- Fresh basil (optional) for garnish
Instructions
- Preheat your oven to 400°F (200°C) and grease a baking dish.
- In a mixing bowl, combine ground turkey, pork rind crumbs, egg, ricotta cheese, Parmesan cheese, garlic powder (if using), Italian seasoning (if using), salt, and pepper. Mix until just combined.
- Form the mixture into evenly sized meatballs and place them in the prepared baking dish. Bake for 20 minutes or until browned.
- For the sauce, melt butter in a skillet over medium heat. Add minced garlic and sauté until fragrant. Stir in heavy cream and season with salt and pepper; simmer until thickened. Mix in grated Parmesan cheese.
- Toss the baked meatballs in the creamy sauce until fully coated before serving.
