  • 1 medium head of cauliflower (riced)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup marinara sauce
  • Additional mozzarella cheese for topping
  • Toppings of choice (pepperoni, veggies, etc.)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rice the cauliflower using a food processor.
  3. Microwave the riced cauliflower for 5-6 minutes until soft, then cool and squeeze out excess moisture.
  4. In a mixing bowl, combine riced cauliflower with mozzarella, Parmesan, egg, oregano, garlic powder, salt, and pepper until mixed well.
  5. Spread the mixture on a parchment-lined baking sheet to form a round crust about 1/4 inch thick. Bake for 20-25 minutes until golden.
  6. Remove from the oven and spread marinara sauce over the crust. Add additional cheese and desired toppings.
  7. Bake again for 10-12 minutes until the cheese is melted and bubbly.
