- 4 large russet potatoes
- 4 cups vegetable oil
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 2 cups shredded cheddar cheese
- Optional toppings: sliced jalapeños, ranch dressing, chopped green onions
Instructions
- Rinse and soak cut potatoes in cold water for at least 30 minutes. Pat dry.
- Heat oil in a large pot to 350°F (175°C). Fry potatoes in batches for 4-5 minutes until golden brown; drain on paper towels.
- Season fries with salt and black pepper immediately after frying.
- Layer fries in a baking dish and sprinkle cheese (and jalapeños if desired) over the top.
- Broil for 2-3 minutes until cheese is melted and bubbly.
- Drizzle ranch dressing on top and garnish with green onions. Serve hot.
