- 10 ounces digestive biscuits (or graham crackers), crushed
- 5 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
- 2 (8-ounce) packages cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- ½ cup fruit topping (strawberry, blueberry, or cherry)
Instructions
- Preheat oven to 325°F (163°C). Combine crushed biscuits, melted butter, and sugar in a bowl; press into a springform pan. Bake for 8-10 minutes and let cool.
- Beat cream cheese until smooth; add sugar and vanilla. Mix in eggs one at a time until just combined. Fold in sour cream.
- Pour filling over the cooled crust; smooth the top. Bake for 50-60 minutes until slightly jiggly in the center.
- Cool at room temperature for an hour; then chill for at least 4 hours or overnight.
- Serve topped with your choice of fresh fruit.
