  • 1 pound boneless, skinless chicken breasts
  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 2 cups fresh broccoli florets
  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese, softened
  • Olive oil, salt, pepper, garlic powder, onion powder, Parmesan cheese (optional garnish)

Instructions

  1. Season chicken with salt and pepper. In a large skillet, heat olive oil over medium heat and cook chicken until golden brown on both sides. Remove from pan and slice.
  2. In the same skillet, add rice and stir for 1-2 minutes. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
  3. Add broccoli on top of rice; cover and cook for an additional 5 minutes until tender.
  4. Stir in garlic powder, onion powder, cheddar cheese, and cream cheese until melted. Fold in sliced chicken until well combined.
  5. Serve warm; garnish with Parmesan cheese if desired.
