Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 cups long-grain white rice
- 4 cups chicken broth
- 2 cups fresh broccoli florets
- 1 cup shredded cheddar cheese
- ½ cup cream cheese, softened
- Olive oil, salt, pepper, garlic powder, onion powder, Parmesan cheese (optional garnish)
Instructions
- Season chicken with salt and pepper. In a large skillet, heat olive oil over medium heat and cook chicken until golden brown on both sides. Remove from pan and slice.
- In the same skillet, add rice and stir for 1-2 minutes. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
- Add broccoli on top of rice; cover and cook for an additional 5 minutes until tender.
- Stir in garlic powder, onion powder, cheddar cheese, and cream cheese until melted. Fold in sliced chicken until well combined.
- Serve warm; garnish with Parmesan cheese if desired.
