- 8 ounces rotini pasta
- 1 pound boneless, skinless chicken breasts
- 4 ounces cream cheese
- 1 cup sharp cheddar cheese
- 1 cup chicken broth
- Olive oil
- Salt
- Pepper
- Garlic powder
- Dried Italian herbs
Instructions
- Cook rotini pasta in a large pot of salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and garlic powder. Cook until browned (about 5-7 minutes). Remove from skillet and set aside.
- In the same skillet, add chicken broth and bring to a simmer. Stir in cream cheese until melted and smooth. Gradually add cheddar cheese until fully melted.
- Return the cooked pasta and chicken to the skillet, tossing everything to coat with the sauce. Stir in Italian herbs and adjust seasoning as needed.
- Serve immediately garnished with fresh basil.
