Ingredients
- 2 pounds boneless, skinless chicken breasts
- 6 medium potatoes, thinly sliced
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 cup chicken broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- ½ teaspoon paprika
Instructions
- Preheat the oven to 375°F (190°C).
- Season chicken breasts with salt, pepper, garlic powder, and onion powder.
- Sear the chicken in olive oil over medium-high heat until golden brown on both sides.
- In a greased baking dish, layer sliced potatoes and season with salt and pepper.
- Place the seared chicken on top of the potatoes.
- In a bowl, mix sour cream, chicken broth, thyme, and paprika; pour over chicken and potatoes.
- Top with shredded cheddar cheese.
- Cover with foil and bake for 30 minutes; then uncover and bake for an additional 15-20 minutes until bubbly.
