  • 1 small bunch fresh thyme
  • 2 cloves garlic
  • 6 ounces Gruyère cheese
  • 1/2 cup panko breadcrumbs
  • 1/2 cup whole or 2% milk
  • 1 large egg
  • 2 teaspoons Worcestershire sauce
  • 2 1/2 teaspoons kosher salt, divided
  • 3/4 teaspoon freshly ground black pepper, divided
  • 1 1/2 pounds ground beef
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1/2 cup dry white wine
  • 1 (14.5-ounce) can beef broth
  • 1 teaspoon balsamic or sherry vinegar
  • Crusty bread (optional)

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Slice onions, mince garlic, and grate Gruyère cheese.
  3. In a mixing bowl, combine garlic, thyme, breadcrumbs, milk, egg, Worcestershire sauce, salt, pepper, and ground beef. Mix until just combined.
  4. Shape into 32 meatballs and place on the prepared baking sheet.
  5. Bake for 15-20 minutes until cooked through.
  6. Meanwhile, caramelize onions in butter until golden brown.
  7. Add flour to the onions followed by white wine and beef broth; cook until thickened.
  8. Combine baked meatballs with sauce and top with remaining cheese; broil until bubbly.
