Ingredients
- 1 pound ground beef
- 1 cup long-grain white rice
- 1 can (14.5 ounces) diced tomatoes
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 small onion, finely chopped
- 1 teaspoon minced garlic
- Salt and pepper to taste
- Italian seasoning
Instructions
- In a large skillet, brown the ground beef over medium heat; season with salt and pepper. Add onion and garlic; cook until the onion is soft.
- Stir in diced tomatoes (with juice), rice, and beef broth; add Italian seasoning. Bring to a boil.
- Cover and reduce heat; simmer for about 20 minutes or until rice is tender and liquid is absorbed.
- Remove from heat; stir in both cheeses until melted.
- Garnish with fresh parsley and serve warm.
