- 2 large russet potatoes, peeled and grated

Instructions
- Rinse grated potatoes under cold water to remove excess starch. Squeeze out moisture using a kitchen towel.
- In a mixing bowl, combine drained potatoes with shredded cheddar cheese, beaten egg, flour, green onions, salt, pepper, and garlic powder if desired.
- Heat about ¼ inch of vegetable oil in a skillet over medium heat until shimmering.
- Shape mixtures into pancakes using your hands (about ¼ cup each) and fry until golden brown on both sides (about 4-5 minutes each).
- Transfer cooked pancakes to paper towels to drain excess oil before serving hot.
