  • 1 pound boneless, skinless chicken breasts, diced
  • 4 flatbreads
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons sweet chilli sauce
  • ½ cup diced bell peppers
  • ½ cup sliced green onions
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder

Instructions

  1. In a mixing bowl, combine diced chicken with sweet chilli sauce, olive oil, salt, pepper, and garlic powder. Toss until evenly coated.
  2. Heat a large skillet over medium heat. Cook the chicken mixture for 6-8 minutes until fully cooked and no longer pink. Remove from heat.
  3. Preheat oven to 400°F (200°C). Place flatbreads on a baking sheet and top with the cooked chicken mixture, mozzarella cheese, bell peppers, and green onions.
  4. Bake for 8-10 minutes or until the cheese is melted and bubbly.
  5. Garnish with fresh cilantro if desired. Slice and serve hot.
