  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ cup granulated sugar (for rolling)
  • 2 teaspoons ground cinnamon (for rolling)

Instructions

  1. 1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. 2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
  3. 3. Add egg, vanilla extract, and pumpkin puree; mix until combined.
  4. 4. In another bowl, whisk together flour, cream of tartar, baking soda, salt, and spices.
  5. 5. Gradually combine dry ingredients with wet mixture until just mixed.
  6. 6. Prepare cinnamon sugar by mixing granulated sugar with ground cinnamon.
  7. 7. Roll tablespoon-sized portions of dough into balls; coat in cinnamon sugar.
