Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ¾ cup pumpkin puree
- 2 ¾ cups all-purpose flour

- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- ¼ cup granulated sugar (for rolling)
- 2 teaspoons ground cinnamon (for rolling)
Instructions
- 1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- 2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
- 3. Add egg, vanilla extract, and pumpkin puree; mix until combined.
- 4. In another bowl, whisk together flour, cream of tartar, baking soda, salt, and spices.
- 5. Gradually combine dry ingredients with wet mixture until just mixed.
- 6. Prepare cinnamon sugar by mixing granulated sugar with ground cinnamon.
- 7. Roll tablespoon-sized portions of dough into balls; coat in cinnamon sugar.
- 8. Place on the baking sheet 2 inches apart and bake for 10-12 minutes or until edges are golden.
- 9. Allow to cool for 5 minutes on the sheet before transferring to a wire rack.
