- 2 pounds chicken, cut into pieces
- 2 tablespoons vegetable oil
- 1 teaspoon mustard seeds
- 1 large onion, finely chopped
- 2 teaspoons minced garlic
- 1 teaspoon minced ginger
- 2–3 green chilies, slit lengthwise
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 2 teaspoons coriander powder
- 1 teaspoon garam masala
- 1 cup tomatoes, chopped
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Marinate chicken with turmeric, red chili powder, coriander powder, and salt for at least 30 minutes.
- Heat oil in a skillet over medium heat. Add mustard seeds and let them splutter.
- Sauté onions until golden brown.
- Add garlic, ginger, and green chilies; cook for another 2 minutes until fragrant.
- Stir in marinated chicken; sauté until it turns white (5-7 minutes).
- Mix in chopped tomatoes; cook until softened.
- Cover and simmer for about 20-25 minutes until chicken is tender.
- Stir in garam masala; cook for an additional 2 minutes.
- Garnish with fresh coriander and serve hot.
