- 1 pound boneless, skinless chicken breasts
- 1 cup mixed bell peppers (red and green), chopped
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup sugar
- 1/2 cup white vinegar
- 1/4 cup ketchup
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1/2 cup all-purpose flour
- 1/4 cup cornstarch
- 1/2 cup vegetable oil, for frying
- 1/2 cup onion, chopped
- 2 teaspoons minced garlic
- sesame seeds, for garnish
- green onions, sliced, for garnish
Instructions
- Season chicken with salt and pepper. Coat evenly in a mixture of flour and cornstarch.
- Heat vegetable oil in a large skillet over medium-high heat; fry chicken until golden brown (about 5-7 minutes). Drain on paper towels.
- In the same skillet, sauté chopped bell peppers and garlic until tender (3-4 minutes).
- Whisk together sugar, vinegar, ketchup, and soy sauce; add to vegetables and bring to simmer.
- Stir in cornstarch mixed with water to thicken the sauce (1-2 minutes).
- Add fried chicken and pineapple; toss to coat and heat through (2 minutes).
- Garnish with sesame seeds and green onions before serving.
