Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup granulated sugar (plus extra for filling)
- ½ cup unsalted butter, melted
- 24 ounces cream cheese, softened
- 3 large eggs
- 1 cup sour cream
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
- 1 pint fresh strawberries, hulled and halved
Instructions
- Preheat the oven to 325°F (160°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into a springform pan and bake for 10 minutes.
- In a mixing bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing well. Add eggs one at a time, then stir in sour cream and flour until smooth.
- Pour filling over the crust and bake for 50–60 minutes until slightly jiggly in the center. Cool in the oven for one hour before refrigerating for at least four hours or overnight.
- For the ganache, heat heavy cream to simmering point; remove from heat and mix in chocolate chips until smooth.
- Once cheesecake is chilled, pour ganache over and top with halved strawberries.
