Instructions
- Sift together powdered sugar and almond flour.
- Beat egg whites and cream of tartar until soft peaks form; gradually add granulated sugar until stiff peaks form. Mix in vanilla.
- Gently fold the dry ingredients into the egg whites until fully combined.
- Pipe small circles onto parchment-lined baking sheets and let them rest until a skin forms.
- Bake at 300°F (150°C) for 15-18 minutes until shiny and risen; cool completely.
- Heat heavy cream until boiling, pour over chopped chocolate, stir until smooth; let cool to thicken.
- Pair up macarons, fill with ganache, sandwich together, and decorate with candy eyes and noses.
