Instructions

  1. Sift together powdered sugar and almond flour.
  2. Beat egg whites and cream of tartar until soft peaks form; gradually add granulated sugar until stiff peaks form. Mix in vanilla.
  3. Gently fold the dry ingredients into the egg whites until fully combined.
  4. Pipe small circles onto parchment-lined baking sheets and let them rest until a skin forms.
  5. Bake at 300°F (150°C) for 15-18 minutes until shiny and risen; cool completely.
