- 6 ounces dark chocolate (70% cacao)
- 3 large eggs
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- Pinch of salt
Instructions
- Melt the dark chocolate in a heatproof bowl set over simmering water until smooth. Remove from heat to cool slightly.
- Whisk egg yolks, sugar, and vanilla in a separate bowl until pale and fluffy; stir in melted chocolate.
- In a clean bowl, beat egg whites with a pinch of salt until stiff peaks form. Gently fold into the chocolate mixture.
- Whip cream to soft peaks; fold into the chocolate mixture until fully combined.
- Spoon mousse into serving dishes and refrigerate for at least 2 hours to set.
