Ingredients
- 1 cup chocolate cookies, crushed
- ¼ cup unsalted butter, melted
- 1 cup sweetened shredded coconut
- 1 cup heavy cream
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup coconut milk
- 1 tablespoon gelatin powder
- 3 tablespoons cold water
- ½ cup semi-sweet chocolate chips
Instructions
- Prepare the crust by mixing crushed cookies and melted butter; press into a springform pan and refrigerate.
- Bloom gelatin in cold water. In a saucepan, combine coconut milk, shredded coconut, and powdered sugar over medium heat until warm; stir in bloomed gelatin.
- Whip heavy cream with vanilla until stiff peaks form; fold in the cooled coconut mixture and spread over the crust. Chill for at least 4 hours.
- For ganache, melt chocolate chips in heated cream until smooth; let cool slightly before pouring over set mousse. Chill for another hour before serving.
